Full-time, temporary (with the possibility of becoming permanent) at the Paul L. Byrne Memorial Agricultural Teaching and Research Center (University Farm), which is located about five miles south of the main campus. The facilities include: offices; classrooms; a pavilion; beef, dairy, meats, sheep, and swine units; shops; a nursery and green houses; 800 acres of diversified irrigated cropland; and 250 acres of rangeland. POSITION: The Livestock Technician II will be assigned to the federally inspected Meats Facility. Under the direction of a faculty member, the incumbent will assist in lab setup and function; work with students and faculty performing daily activities involving the harvest, dressing, fabrication, and processing of livestock, including sausage and jerky manufacturing, meat curing, and packaging; coordinate the laboratory’s food safety program (HACCP), including microbiological testing; manage all production records, including both food safety and inventory; assist/support research activities in the meats laboratory; assist in the coordination of the state FFA meat judging contest; assist in minor maintenance of buildings and facilities; provide safety training for student employees; and perform other duties as assigned. 

QUALIFICATIONS: Requirements include a Bachelor’s of Science in meat science, food science, animal science, or related field or equivalent specialized experience which demonstrates the applicant has successfully acquired the knowledge and abilities for this particular position. An extensive knowledge of harvesting, dressing, fabrication, and further processing (sausage manufacturing and meat curing) of beef, pork, and lamb is required. The incumbent must have knowledge and the ability to work with USDA inspection and HACCP, including maintaining clear and concise food safety and inventory records; possess the ability to read and write at a level appropriate to the duties of this position; establish and maintain cooperative working relationships with a diverse population of staff, faculty, students and others; adjust to change (i.e., work environment, technology); function cooperatively and productively as a member of a unit; and possess a demonstrated ability to perform the duties listed herein. 

SPECIAL REQUIREMENTS: The incumbent must possess and maintain a valid California Class A driver's license. If education was used as a qualifying factor, a sealed, official transcript providing evidence of educational attainment will also be required of the successful candidate. 

PREFERENCES: Preference may be given to candidates with: a Master of Science degree in meat science or related field; three years of meat industry experience including, but not limited to, food safety training, quality control training, harvesting and dressing of livestock, fabrication, sausage and cured meats production; meat judging experience; and computer literacy.

SALARY:

$3,475 - $5,214 per month, with benefits, including tuition fee waiver (if eligible).

New employees are typically hired at the beginning of the salary range.
